Laboratory machine range for small scale production/lab trials

This range of machinery has been developed to assist the professional confectioner with their recipe formulations, product trials, raw material tests and other work not otherwise possible on large-scale production machinery.

The range of machinery includes a batch vacuum cooker, coating pan and pulling machine. Further details of these machines are given below;

Batch Vacuum Cooker

This cooker is capable of preparing a wide variety of confectionery masses such as hard candy, toffee and caramel, chewy candy, jellies, etc.

The machine comprises of the following parts;

A two-part cooking vessel – the top vessel is mounted to two sturdy pillars and houses a stirrer mechanism, which is driven through a geared motor. This is used for mixing the product during the cooking process. (if mixing is required) The vessel has a 100mm diameter hinged port used for loading or inspection, which is illuminated for better visibility.

There is also a temperature probe mounted inside the vessel with a digital display on the control panel.

A vacuum pump assembly is mounted to the machine base-plate and connected to the top vessel. A gauge is provided for controlling the amount of vacuum.

The lower vessel is steam jacketed and insulated and provides the heat for the cooking process. This vessel is sealed to the top vessel during cooking and secured in position with four clips. When the cooking process is complete the operator detaches the clips and the vessel can then be lowered. This is achieved by an easy to use handwheel operated lifting/lowering mechanism. Once the vessel has been lowered it can be moved away from the rest of the machine and the cooked batch poured out by use of a lever to tilt the bowl.

The steam-jacketed vessel includes a steam pressure gauge and pressure relief valve and also comes with a pressure test certificate

Coating Pan

The laboratory coating pan is basically a stainless steel spherical fabrication mounted to a frame and driven through a variable speed geared motor. All the machine parts including the electrical control panel are mounted to a stainless steel base plate. The machine is manufactured from stainless steel or other food-safe materials throughout.

The standard machine is supplied with a 300mm diameter pan, but can also be supplied with a larger capacity 400mm diameter pan either as an alternative or an additional unit. The pans are shaft-mounted and secured to the drive using only a single grub-screw and can therefore be quickly and easily removed or changed.

The pan can be rotated in either direction by simply activating a switch on the control panel.

Speed of the unit is controlled by a potentiometer located on the control panel, and is variable between 5 and 75rpm. Speed of rotation is displayed on the control panel. The angle of the pan can be adjusted by using the hand wheel provided, at any angle from 0-180° and there is a scale to indicate the angle selected.

Hot or cold air blowers can be provided as an optional extra if required.

These special features allow many different products to be developed on the machine.

Pulling Machine

The pulling machine has been designed for the aeration of many different types of confectionery masses such as hard candy, toffee and chewy sweets.

It consists of a geared motor, which drives the two rotating pulling arms around a third fixed arm. All internal moving parts are housed in a fixed stainless steel cover, and a clear unbreakable panel covers the product contact area. This clear panel is hinged to allow access to the product area, and is fitted with guard switches to prevent the operator from movement hazards whilst the machine is in motion. The machine cannot be operated when the guard is in the raised position.

The pulling arms are lined with plastic sleeves to prevent the product from sticking to them and to make cleaning easy. The arms can be rotated in either clockwise or anti-clockwise directions. Speed of the arms is controlled by a potentiometer located on the control panel, and is variable between 10 and 70rpm. The speed of rotation is also displayed on the control panel.

Both the speed of rotation and direction can be adjusted whilst the machine is running.
